It’s also the hardest thing to trust while travelling — a normal panadería is a minefield of flour. The joy of Valencia is that it has a genuine cluster of fully dedicated, 100% gluten-free bakeries, where the whole premises is safe and you can simply point at the cabinet.
Why “dedicated” matters
In a dedicated gluten-free bakery, there is no gluten on site at all — no wheat flour in the air, no shared oven, no cross-contamination to negotiate. For coeliacs, that’s the gold standard, and it means you can relax completely. Every bakery below is dedicated.

A tip for your trip
If you’re renting an apartment, a dedicated bakery is your best friend: stock up on bread in the morning and you’ve solved breakfast and lunch for the week. Pair one with a specialty-coffee spot like Butter Eatery House and you’ve got a very good gluten-free start to any Valencia day.
